- 1 x 8-inch pie crust
- 1/2 c. Firmly packed brown sugar
- 3 Tbsp. Cornstarch
- 1/4 tsp Salt
- 2 c. Lowfat milk
- 2 x Egg yolks, slightly beaten
- 1 Tbsp. Margarine
- 1 1/2 tsp Vanilla

- 1. In medium saucepan, combine sugar, cornstarch, and salt. Stir in lowfat milk, blending till smooth. Cook over medium heat till smooth. Cook over medium heat till mix boils and thickens, stirring constantly. Boil for 2 min.
- 2. Remove from heat. Blend a small amount of warm mix into egg yolks
- (reserve whites). Return to saucepan, blending well. Cook till mix just begins to bubble, stirring constantly. Remove from heat; stir in margarine and vanilla. Pour into pie shell. Chill for 3 hrs. Serve with whipped cream.
