- Heavy cream - 1¼cups
- Pure Vanilla extract - 1tsp
- Corn starch or Custard powder - 3tbsp
- For the Butterscotch Sauce:
- Unsalted Butter - 4tbsp (½ a stick)
- Brown Sugar - 1cup
- Salt - 1tsp
- Light Cream - 1cup
- Almonds - ½cup
- Sugar - 2~3tbsp
- Sliced Almonds - 1/3cup
- Vanilla extract - ½tsp

%3C/p%3E%3Cp%3EWe%20are%20starting%20another%20edition%20of%20blogging%20marathon%20today.%20Can't%20believe%20we%20are%20almost%20at%20the%20mid%20year%20mark%20and%20before%20we%20know%20it,%20it%20will%20be%20holiday%20season%20and%20a%20brand%20new%20year%20again.%20Hmmmm...%20time%20sure%20is%20flying.%20Coming%20back%20to%20the%20present,%20we%20have%20been%20enjoying%20nice%20warm%20temperatures%20for%20the%20past%20couple%20of%20days%20and%20hopefully%20this%20weather%20is%20here%20to%20stay.%3C/p%3E%3Cp%3EMy%20theme%20for%20this%20week%20is%20'Summer%20Specials'%20and%20for%20the%20first%20day%20I%20have%20a%20sweet%20and%20cool%20ice%20cream.%20I%20think%20it%20was%20my%20sister%20who%20once%20asked%20for%20a%20ice%20cream%20with%20nuts%20and%20I%20started%20looking%20for%20recipes%20online.%20One%20of%20the%20search%20led%20me%20to%20Sruthi's%20Part%20time%20chef%20blog%20and%20her%20butterscotch%20ice%20cream%20got%20me%20with%20her%20amazing%20clicks.%20I%20made%20the%20ice%20cream%20right%20away.%3C/p%3E%3Cp%3EThe%20highlight%20of%20butterscotch%20ice%20cream%20is%20the%20crunchy%20bits%20and%20Sruthi's%20recipe%20uses%20crushed%20up%20almond%20praline.%20But%20I%20was%20skeptical%20about%20making%20caramel%20and%20praline.%20My%20fear%20of%20making%20both%20still%20continues%20since%20the%20first%20time%20I%20made%20the%20praline,%20my%20caramel%20burned%20and%20it%20was%20way%20too%20bitter%20and%20the%20second%20time%20I%20was%20too%20careful%20that%20I%20took%20it%20off%20the%20heat%20even%20before%20it%20reached%20the%20caramel%20stage.%20Uffffffff...%20I'm%20not%20sure%20when%20I%20can%20make%20a%20decent%20caramel.%20For%20now,%20I%20have%20this%20pale%20looking%20praline%20that%20tasted%20better%20than%20it%20looked,%20so%20I%20decided%20not%20to%20make%20another%20batch%20of%20it.%3C/p%3E%3Cp%3EI%20did%20not%20add%20the%20crushed%20praline%20to%20the%20ice%20cream,%20but%20serve%20on%20the%20side%20because%20the%20kids%20in%20the%20house%20don't%20like%20the%20crunchy%20stuff.%20All%20in%20all,%20other%20than%20the%20praline%20mishap,%20this%20is%20a%20pretty%20amazing%20ice%20cream%20and%20if%20you%20are%20looking%20to%20make%20a%20different%20flavored%20ice%20cream,%20then%20this%20one%20is%20right%20for%20you.%20I%20used%20my%20ice%20cream%20maker,%20but%20Sruthi's%20recipe%20suggests%20to%20just%20freeze%20the%20ice%20cream%20and%20because%20of%20the%20heavy%20cream%20and%20butterscotch%20sauce,%20the%20ice%20cream%20will%20have%20a%20silky%20texture%20and%20there%20is%20no%20need%20to%20churn%20it.%3C/p%3E%3Cp%3ERecipe%20adapted%20from%20here:%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EMake%20the%20Butterscotch%20Sauce:%20In%20a%20heavy%20bottomed%20saucepan,%20combine%20butter,%20brown%20sugar,%20salt%20and%20%C2%BCcup%20of%20light%20cream.%20Place%20on%20medium%20flame%20and%20cook,%20stirring%20continuously,%20until%20the%20butter%20has%20melted%20and%20sugar%20dissolves%20to%20form%20a%20smooth%20mixture.%3C/p%3E%3Cp%3EStop%20stirring,%20reduce%20the%20fame%20and%20allow%20the%20mixture%20to%20simmer%20for%202~3%20minutes.%3C/p%3E%3Cp%3ETurn%20off%20the%20heat%20and%20stir%20in%20the%20remaining%20light%20cream.%20Let%20the%20mixture%20cool%20completely,%20transfer%20to%20a%20clean%20jar%20and%20store%20the%20sauce%20in%20the%20refrigerator.%20It%20needs%20to%20be%20reheated%20on%20low%20heat%20for%20a%20few%20minutes%20to%20loosen%20the%20consistency.%3C/p%3E%3Cp%3EMake%20the%20ice%20cream:%20Mix%20corn%20starch%20with%20%C2%BCcup%20of%20milk%20in%20a%20small%20bowl%20and%20set%20aside.%3C/p%3E%3Cp%3EAdd%20the%20remaining%20milk%20and%20heavy%20cream%20in%20a%20large%20sauce%20pan.%20Bring%20the%20mixture%20to%20a%20boil%20and%20cook%20on%20moderate%20heat%20for%20about%204%20minutes.%3C/p%3E%3Cp%3ETurn%20off%20the%20heat.%20Gradually%20whisk%20in%20the%20corn%20starch%20mixture.%20Return%20to%20boil%20and%20cook%20on%20moderately%20high%20heat%20until%20the%20mixture%20thickens%20a%20little%20bit,%20between%201-2%20minutes.%3C/p%3E%3Cp%3ERemove%20from%20heat%20and%20let%20cool.%20Once%20the%20mixture%20is%20slightly%20cooled%20add%20the%20vanilla%20extract.%20Once%20the%20mixture%20is%20completely%20cooled,%20add%20the%20butterscotch%20sauce%20and%20mix%20well.%20Start%20by%20adding%20about%201%C2%BCcup%20of%20butterscotch%20sauce,%20taste%20and%20see%20if%20it%20needs%20more%20sweetness.%20I%20ended%20up%20%20adding%20ALL%20of%20the%20butterscotch%20sauce%20because%20we%20have%20big%20sweet%20tooth,%20but%20if%20you%20are%20not,%20then%20start%20with%20less%20and%20add%20more%20as%20needed.%20Chill%20the%20mixture%20for%20at%20least%203-4%20hours%20or%20overnight.%3C/p%3E%3Cp%3EOnce%20thoroughly%20chilled%20follow%20your%20ice%20cream%20machine%20instructions%20to%20make%20the%20ice%20cream.%20Sprinkle%20with%20almond%20praline%20and%20Enjoy!!%3C/p%3E%3Cp%3EAlmond%20Praline:%20Recipe%20adapted%20from%20here.%3C/p%3E%3Cp%3EAlmonds%20-%20%C2%BDcup%3C/p%3E
