Receta Cajun Oven Fried Vegetables

Ingredientes
- 2 lrg Large eggs
- 1 c. Unseasoned Dry Bread Crumbs
- 1/2 tsp Cajun Seasoning
- 8 ounce Whole Mushrooms
- 1 med Zucchini, Diagonally Sliced
- 1 med Bell Pepper, Cut Into 1/2" Strips
Direcciones
- Heat oven to 375 degrees. Grease cookie shet with shortening. Beat Large eggs in a small bowl with fork. Mix bread crumbs and Cajun seasoning in small bowl.
- Dip mushrooms, zucchini, and bell pepper into egg mix, then coat with bread crumb mix. Arrange vegetables in single layer, pcs not touching, on cookie sheet.
- Bake 20 to 25 min, turning after 10 min, till coating is golden. Serve warm.
- NOTES : Cajun or possibly Creole Seasoning usually contains warm peppers, garlic and paprika. If you'd like a milder flavor, leave out the Cajun seasoning and use 1/4 tsp salt and 1/8 tsp pepper instead.
