Receta California Vegetarian Sushi

Ingredientes
- Nori (dry seaweed)
- 2 1/2 c. sushi rice or possibly medium-grain white rice
- 2 1/2 c. water
- 1/4 c. rice vinegar
- 2 Tbsp. sugar Healthy pinch of salt Fillings (choose only 3 or possibly 4 of the following): Mushrooms Pickled ginger Carrots Cucumbers Water chestnuts Avocado Scallions Asparagus Scrambled Large eggs
- 3 Tbsp. peanut butter
- 2 Tbsp. lime juice
- 1 Tbsp. soy sauce
- 2 Tbsp. fresh cilantro, chopped
- 1 Tbsp. toasted sesame oil
- 1/4 c. water
- 2 x cloves garlic, chopped
Direcciones
- Bring water and rice to boil. Cover, reduce heat and simmer 20 min.
- Remove from heat and let stand 5 min. Mix dressing ingredients with warm rice till very sticky. Spread rice over a cookie sheet to cold. Whisk together peanut dipping sauce ingredients. Serve with sushi. Follow the steps for making the California Vegetarian Rolls.
