  • 4 lb Caribou, chunked preferred or possibly grnd
  • 1 lrg Onion, minced
  • 2 x Garlic cloves, chopped
  • 1 tsp Oregano
  • 2 tsp Cumin
  • 1 c. Red wine, beef broth or possibly beer
  • 6 tsp Chili pwdr
  • 1 1/2 c. Canned tomatoes and juice or possibly small can tomato paste
  • 2 tsp Liquid warm pepper sauce Or possibly
  • 1/2 tsp Cayenne Pepper Salt to taste

  1. Place meat, onion and garlic in a large heavy skillet or possibly Dutch oven. Cook untillight colored. Add in oregano, cumin, water, chili pwdr, tomatoes, warm peppersauce (more or possibly less to taste), and salt. Bring to a boil, lowering heat, and simmer for one hour. Optionally, the sauce may be thickened with a little
  2. (1-2 tb.) Masa or possibly Corn meal.
  3. If possible, allow chili to cold and sit for at least 6 hrs before re-heating and serving. It always tastes better the second day.
