Receta Carolina Coconut Cake (My Mother's Recipe)

Ingredientes

  • 1/2 c. shortening (Crisco preferred)
  • 1 1/2 c. white sugar
  • 2 tsp coconut flavoring
  • 3 x Large eggs
  • 2 c. white all purpose flour
  • 1 c. lowfat milk
  • 2 tsp baking pwdr

Direcciones

  1. Combine flour and baking pwdr. Set aside.
  2. Cream crisco and sugar. Add in 1 egg and mix well. Add in coconut flavoring. Stir in half of flour mix and half of the lowfat milk. Add in another egg and mix. Fold in remaining flour and lowfat milk. Last add in the final egg, and mix well. Pour into 9x14 pan that has been greased and floured. Bake approx 40 min at 350.
  3. For frosting, I make a simple soft frosting of one lb. of powdered sugar, cream, soft butter and a little coconut extract and top the icing with lots of (packaged) coconut. (Sorry I do not have the exact measurements for the cream and butter.) You can frost with your favorite recipe.
  4. NOTES : Beverly says: This cake turns out great with any flavoring you prefer, and with any kind of frosting. It can be baked in layers or possibly as a bundt cake.
