  1. Cream the butter and sugar till light and fluffy. Beat the egg and water together and mix into the creamed butter and sugar. Stir in the carrots and apple. Sift the flour, bicarbonate of soda, baking pwdr, salt and nutmeg. Stir to blend.
  2. Spoon the mix into a prepared bun tray. Bake at 180 C/350 F/gas mark 4 till the tops spring back when lightly touched. Allow to stand for 10 min before transferring to wire rack.
