Receta Carrot Tofu Soup With Dill

Ingredientes
- 1 1/2 lb Carrots, peeled and sliced
- 4 c. Water
- 1 tsp Salt
- 1/2 sm Onion
- 1 x 10.5 ounce pkg soft silken tofu, reg or possibly low-fat
- 1 x Scant tbs minced fresh dill, (or possibly 1tsp dry)
- 1 tsp Red miso, or possibly to taste
- 1/2 tsp Grnd white pepper
Direcciones
- Combine carrots, water, salt, and onion in a medium saucepan. Cook over medium heat till carrots are tender, about 15 minutes.
- Scoop carrots and onion out of cooking water; place in a blender or possibly food processor.
- Add in tofu, dill, miso, white pepper, and a small amount of cooking water; puree. Return puree to cooking water, mix wiell and serve immediately.
- Makes 4-6 servings.
