Receta Cauliflower And Red Peppers With Lemon Dressing

Ingredientes
- 1 lrg cauliflower
- 1 lrg red pepper, roasted, and, cut into strips Lemon Dressing
- 1 tsp white sugar
- 3/4 tsp salt
- 1/2 tsp pepper tsp juice and grated rind of one lemon
- 1 x finely minced onion
- 2 clv garlic, chopped
- 1/2 c. extra virgin olive oil
Direcciones
- In a pot of boiling salted water, cook cauliflower for about 2 min. Remove and drain.
- Wrap in foil and cook covered on grill for another 6-8 min.
- Broil red peppers till charred all over. Remove and place in plastic bag. Let steam for 10 min, then peel, seed and cut into strips.
- Lemon Dressing:Combine all ingredients and mix well. Pour over vegetables and toss well.
