Traditional Caymanian style fried fish

  • 1 lb fish fillets about 3/4 to 1 inch thick (mahi mahi, snapper or grouper)
  • 2 tbsp lime juice
  • 1 cup water
  • 1/2 cup thinly sliced onion
  • 1/2 cup sliced green or red bell peppers
  • 1/2 cup diced tomato
  • 1 tbsp worcestershire sauce
  • 1 tbsp Thai garlic pepper sauce (original recipe calls for ketchup)
  • 1/4 cup butter or margarine

Direcciones

  1. Marinate fillets in tbsp lime juice and water with salt and pepper for about 15 minutes
  2. Pat the fillets dry
  3. Heat 2 tbsp of the butter in a non-stick skillet over moderately high heat until the foam starts to subside
  4. Add the fish and saute, turning once until just cooked through.
  5. Only 1 to 2 minutes on each side. Overcooking can lead to dry fish.
  6. Remove fish from pan, leaving the juices from the fish, adding a little more butter as needed
  7. Saute the onion and bell pepper until soft
  8. Add tomato, worcestershire, pepper sauce and 1 tbsp lime juice and simmer for about 2 minutes until flavors are blended
  9. Put fish on plate and pour sauce
