  • 1/4 c. Extra virgin olive oil
  • 4 x Skinless boneless chicken breast halves, cut into 1/2 " strip
  • 1/2 lb Mushroom, sliced
  • 1 med Onion, minced
  • 2 x Garlic cloves, chopped
  • 1 jar (16 ounce) marinara sauce
  • 1 c. Mozzarella cheese, shredded
  • 1/4 c. Parmesan cheese, grated
  • 2 Tbsp. Parsley, minced
  • 1 box (16 ounce) spaghetti

Direcciones

  1. (1) In a wok, heat 2 Tbsp. oil over high heat till warm, swirling to coat sides of pan. Add in chicken strips and stir-fry till cooked through, but still juicy, 3 to 4 min. Remove to a plate.
  2. 2. In same wok, heat remaining 2 Tbsp. oil over high heat. Add in mushrooms, onion, and garlic. Stir-fry till mushrooms are lightly browned, 3 to 5 min. Return chicken to wok.
  3. 3. Pour in marinara sauce. Cook till heated through, about 3 min. Add in mozzarella and parmesan cheeses. Sprinkle parsley on top. Cover and cook till mozzarella melts, 1 to 2 min.
  4. 4. Serve over bed of cooked spaghetti/pasta.
