Receta Chicken, Cuban Style

Ingredientes
- 1 x Cut up chicken (3 1/2 lbs)
- 1 x Freshly grnd peppr to Tast
- 1 Tbsp. Extra virgin olive oil
- 1/2 c. Onion -- minced
- 1/2 c. Green pepper -- minced
- 1 x Jalapeno ppr.,chop -- rem Seed
- 1 x Garlic, large clove -- Chopped
- 1 tsp Cumin -- grnd
- 1 x Tomato (med) peeled/minced
- 1 Tbsp. Lemon juice
- 1 can Black Beans (15 ounce)
Direcciones
- Sprinkle chicken with freshly grnd pepper to taste. In a 12 inch skillet, saute/fry chicken in extra virgin olive oil about three min on each side; remove from pan. To pan drippings, add in onion, green pepper, jalapeno pepper and garlic. Cook two min, or possibly till onions are softened. Stir in cumin, tomatoes, lemon juice and black beans. Return chicken to pan; cover and simmer 20 min. Remove lid and continue to cook till chicken is done and juices run clear, about 10 min. Serve with rice. Preparation time = 10 min. Cooking time - 40 min.
