Receta Cuban Style Curried Turkey

I got this from a Crockpot Cookbook, its low fat and easy to prepare. Serve over rice, couscous or noodles. Leftovers are good mixed with scrambled eggs and served in flour tortilla for a quick breakfast burrito.

  • 2 tbsp flour
  • 1/2 tsp salt or to taste
  • 1/4 tsp pepper
  • 1 lb boneless turkey breast, cut in to 1" chunks
  • 2 tbsp veg oil
  • 1 onion, chopped
  • 1 clove, garlic minced
  • 1 can 15oz (50% less sodium) black beans, rinsed and drained
  • 1 can 14oz no-salt added diced tomatoes
  • 1/2 cup fat free reduced sodium chicken broth
  • 1/3 cup raisins
  • 1/4 tsp curry powder
  • 1/8 tsp red pepper flakes
  • juice of 1/2 a lime (1 tbsp)
  • 1 tbsp minced cilantro (optional for serving)
  • 1 tbsp minced green onion (optional for serving)
  • 2 cups cooked rice - to serve

Direcciones

  1. Combine flour, salt and pepper in a resealable bag, add turkey and shake to coat.
  2. Heat 1 tbsp of oil in a lg skillet over med heat, add turkey and brown on all sides, transfer to crockpot.
  3. Heat remaining oil and saute onion over med heat till golden, stir in garlic stir and transfer to crockpot.
  4. Stir in beans, tomatoes, broth, raisins, curry powder and red pepper flakes. Cover and cook LOW 4-6 hrs
  5. Adjust seasonings and stir in lime juice.
  6. Serve over rice garnish with cilantro and green onion
