  • 50 gm Pasta, (2oz)
  • 2 Tbsp. Extra virgin olive oil
  • 500 gm Cooked chicken, roughly minced (1lb)
  • 1 x Apple, peeled, cored and diced
  • 1 x Banana, sliced
  • 6 x Salad onions, sliced on the diagonal
  • 1/2 x Cucumber, peeled and diced
  • 50 gm Pistachio nuts, (2oz)
  • 1 x Lemon, juice of
  • 150 ml Natural yogurt, (1/4 pint)
  • 150 ml Low calorie mayonnaise, (1/4 pint) Salt and freshly grnd black pepper

Direcciones

  1. Cook the pasta as per the pack instructions. Drain and toss in the oil.
  2. Place the chicken, apple, banana, salad onions, cucumber, pistachio nuts and pasta in a bowl.
  3. Mix together the lemon juice, yogurt and mayonnaise and toss into the salad. Season to taste.
  4. NOTES : A quick and easy fruit, pasta and chicken salad.
