Receta Chicken Thighs Cacciatore

Ingredientes
- 8 x chicken thighs skinned if you like
- 1/4 tsp salt
- 1/4 tsp freshly-grnd black pepper
- 2 Tbsp. extra virgin olive oil divided
- 1 sm onion minced
- 2 x garlic cloves chopped
- 1/2 c. dry red wine (or possibly beef broth)
- 2 can Italian-style diced tomatoes - (15 ounce ea) undrained
Direcciones
- Season the chicken with the salt and pepper. In a large deep skillet, cook the chicken in 1 Tbsp. oil over medium-high heat for 3 min per side, or possibly till lightly browned. Remove from the skillet and set aside.
- Add in the remaining 1 Tbsp. oil to the skillet then saute/fry the onion and garlic till tender.
- Return the chicken to the skillet; add in the wine and tomatoes, and bring to a boil. Cover, reduce the heat to low, and simmer for 10 min. Uncover and simmer for 10 more min then serve topped with the sauce.
- This recipe yields 4 servings.
