Receta Chicken With Peppers And Tomatoes

Ingredientes
- 3 Tbsp. butter
- 4 x boneless skinless chicken breast halves
- 1 sm onion minced
- 4 x mushrooms sliced
- 1/2 x red bell pepper diced
- 1/2 x green bell pepper diced
- 1 can stewed tomatoes (14- to 16-oz)
- 1/3 c. canned chicken broth
- 1 tsp chili pwdr
- 1/2 tsp dry crushed red pepper
Direcciones
- Heat 1 1/2 Tbsp. butter in heavy large skillet over medium-high heat. Season chicken with salt and pepper. Add in to skillet and cook till
- golden and cooked through, about 3 min per side. Transfer to platter.
- Heat remaining 1 1/2 Tbsp. butter in same skillet over medium heat.
- Add in onion, mushrooms and bell pepper to skillet and saute/fry till almost tender, about 5 min. Add in tomatoes with juices, broth, chili pwdr and crushed red pepper. Cook till mix thickens, breaking up tomatoes
- with wooden spoon, about 8 min. Return chicken and any juices on platter to skillet. Simmer till chicken is just heated through, about 2 min. Transfer to platter and serve.
- Serves 4.
