Receta Chicken with Preserved Lemon and Olives; it won't be me...
Ingredientes
- Chicken with Preserved Lemon and Olives
- 1 whole chicken
- 1/4 preserved lemon
- 1 tbs olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/2 cup whole green olives, with pits
- 2 1/2 cups chicken stock
- 1 1/2 tsp cinnamon
- 1/2 tsp ginger
- pinch saffron threads
- 2 bay leaves
- 2 chicken livers

%3C/p%3E%3Cp%3EI%20realized,%20when%20I%20wrote%20my%20post,%20that%20it%20was%20likely%20not%20to%20win.%3C/p%3E%3Cp%3EI'd%20written%20another%20earlier,%20nice%20one,%20talking%20about%20my%20love%20of%20cooking;%20how%20I%20carefully%20crafted%20each%20recipe%20and%20perfected%20each%20photo.%20(Not%20my%20style,%20either.)%3C/p%3E%3Cp%3EThen%20I%20went%20back%20and%20read%20the%20instructions%20and%20they%20said%20something%20about%20'using%20your%20own%20voice'.%3C/p%3E%3Cp%3EI%20reread%20my%20post.%3C/p%3E%3Cp%3ENot%20a%20voice%20I%20recognized.%3C/p%3E%3Cp%3EMy%20voice%20tends%20to%20be%20opinionated,%20sarcastic%20and,%20occasionally,%20snarky....%3C/p%3E%3Cp%3EMy%20voice%20is%20likely%20not%20the%20voice%20of%20the%20next%20Food%20Blog%20Star.%3C/p%3E%3Cp%3ESo%20I%20redid%20the%20post.%3C/p%3E%3Cp%3EThe%20new%20post%20was%20more%20like%20me....%3C/p%3E%3Cp%3EBut%20I%20was%20pretty%20sure%20it%20wouldn't%20win%20any%20prizes.%3C/p%3E%3Cp%3EI%20was%20happy%20with%20that.%3C/p%3E%3Cp%3EI%20signed%20up%20early%20on%20to%20compete.%20%20I%20think%20it's%20a%20wonderful%20contest%20and%20some%20lucky%20blogger%20will%20get%20a%20wonderful%20prize%20and%20a%20fantastic%20opportunity.%3C/p%3E%3Cp%3EOnce%20the%20challenges%20were%20outlined,%20with%20dates,%20I%20realized%20I%20wouldn't%20be%20able%20to%20finish,%20even%20if%20I%20managed%20to%20advance%20through%20every%20level.%20%20There%20were%202%20challenges%20that,%20either%20do%20to%20travel%20commitments%20or%20technology,%20I%20wouldn't%20be%20able%20to%20participate%20in.%3C/p%3E%3Cp%3ESo%20it%20would%20hardly%20be%20fair%20for%20me%20to%20take%20a%20spot%20that%20could%20be%20used%20by%20someone%20else.%3C/p%3E%3Cp%3EI%20just%20wanted%20to%20help%20promote%20the%20fun!%3C/p%3E%3Cp%3EBut,%20as%20I%20am%20a%20good%20scout,%20and%20always%20prepared%20(sic)%20I%20made%20this%20wonderful,%20classic%20Moroccan%20dish%20last%20week....%20Just%20in%20case%20I%20managed%20to%20advance%20despite%20my%20efforts.%3C/p%3E%3Cp%3EI%20mean,%20after%20all.....%20It's%20about%20the%20food!%3C/p%3E%3Cp%3EI%20mentioned,%20a%20few%20weeks%20ago,%20that%20the%20fairy%20godparents%20at%20Amazon%20delivered%20two%20wonderful%20new%20cookbooks%20to%20my%20door.%3C/p%3E%3Cp%3ELet%20me%20digress%20a%20moment:%20These%20were%20not%20free.%20%20I%20have%20never,%20ever%20received%20anything%20free%20to%20talk%20about%20in%20my%20blog.%20%20I%20have%20been%20offered%20free%20stuff:%20books,%20food,%20whatever;%20but,%20as%20soon%20as%20it's%20discovered%20that%20I%20live%20in%20France.....%20Well,%20even%20the%20people%20who%20promise%20to%20send%20it,%20never%20do.%20%20So%20let%20me%20assure%20you...%20Anything%20I%20promote%20I%20have%20paid%20for%20and%20am%20not%20being%20paid%20for.%3C/p%3E%3Cp%3EBack%20to%20the%20book:%3C/p%3E%3Cp%3EThis%20is%20easily%20the%20best%20cook%20book%20I%20have%20seen%20in%20a%20long,%20long%20time.%20%20The%20photos%20are%20wonderful,%20the%20information%20great%20and%20the%20recipes.....%3C/p%3E%3Cp%3EAhhh,%20the%20recipes.....%3C/p%3E%3Cp%3EI%20haven't%20found%20a%20single%20one%20that%20I%20don't%20want%20to%20jump%20up%20and%20make%20immediately.%3C/p%3E%3Cp%3EI%20even%20bought%20myself%20a%20wee%20present%20-%20a%20tagine.%3C/p%3E%3Cp%3EThis%20is%20my%20first%20ever%20foray%20into%20Moroccan%20cuisine....%3C/p%3E%3Cp%3EIt's%20a%20classic%20Moroccan%20dish,%20popular%20for%20feasts,%20festivals%20and%20holidays....%3C/p%3E%3Cp%3EAnd%20it%20doesn't%20use%20a%20tagine...%3C/p%3E%3Cp%3EBased%20on%20the%20recipe%20from%20'the%20food%20or%20morocco,%20a%20journey%20for%20food%20lover's'.%20%20(Slightly%20modified)%3C/p%3E%3Cp%3ERinse%20the%20preserved%20lemon%20in%20cool%20water.%20%20Remove%20and%20discard%20the%20pulp.%20%20Cut%20the%20rind%20into%20strips.%3C/p%3E%3Cp%3EHeat%20oil%20in%20a%20large%20skillet.%20%20Add%20onion,%20garlic%20and%20saut%C3%A9%20until%20tender,%20about%205%20minutes.%20%20Add%20the%20chicken%20stock,%20herbs,%20spices,%20olives%20and%20lemon.%20%20Stir%20well%20to%20combine.%3C/p%3E%3Cp%3EPlace%20chicken%20in%20a%20deep%20baking%20dish.%20%20Pour%20contents%20of%20skillet%20over%20chicken.%20%20Roast,%20350F%20(180C)%20for%2090%20minutes,%20or%20until%20done,%20basting%20every%2015%20minutes.%3C/p%3E%3Cp%3EWhen%20chicken%20is%20done,%20remove%20from%20dish%20and%20cover%20to%20keep%20warm.%20%20Pour%20the%20sauce%20from%20the%20baking%20dish%20into%20a%20large%20skillet%20and%20bring%20to%20a%20boil.%3C/p%3E%3Cp%3EAdd%20the%20chicken%20livers%20and%20cook%20through.%20Remove%20and%20very%20finely%20chop.%20%20(The%20recipe%20says%20to%20mash%20them%20into%20the%20sauce....%20Mash%20chicken%20livers?%20%20I%20tried.%20%20I%20failed.%20%20I%20chopped.)%20%20Reduce%20the%20sauce%20slightly.%3C/p%3E%3Cp%3ECut%20the%20chicken%20into%20pieces,%20pour%20the%20reduced%20sauce%20over%20and%20serve.%3C/p%3E%3Cp%3EThis%20was%20good.%3C/p%3E%3Cp%3EReally,%20really%20good.%3C/p%3E%3Cp%3EThe%20chicken%20was%20falling%20of%20the%20bones,%20incredibly%20moist%20and%20the%20sauce%20was%20wonderful.%20%20I%20thought%20the%20cinnamon%20might%20be%20a%20bit%20overpowering,%20but%20it%20wasn't%20at%20all.%3C/p%3E%3Cp%3EAnd%20the%20kitchen%20smelled%20heavenly.%3C/p%3E%3Cp%3EDo%20try%20this.....%3C/p%3E%3Cp%3EAnd%20the%20best%20of%20luck%20to%20all%20the%20FoodBuzz%20bloggers%20who%20advanced%20to%20Challenge%20%232.%3C/p%3E){kind=link}
