- Lettuce - enough for small salads per person
- 2 - 4 tsp capers
- Olives, nice ones for garnishing
- Vinaigrette
- 1 tbs tarragon white wine vinegar
- 1 tbs lemon juice
- 1 tsp chopped fresh chives or 1/2 tsp dried
- 1 tsp chopped fresh tarragon or 1/2 tsp dried
- 1 small shallot or 1/2 large
- 1 clove garlic
- 1 tsp Dijon mustard
- 1/3 cup olive oil - the good stuff
