Receta Chicken Zucchini Parmigiana

Ingredientes
- 3 lg. cloves garlic, halved
- 2 tbsp. oil
- 2 chicken breasts, split, skinned & boned
- 3/4 teaspoon salt, divided
- 3 med. zucchini, sliced thin
- 1/2 teaspoon thyme
- 1/4 pound Mozzarella cheese, sliced
- 1/2 c. prepared marinara sauce
- Pepper
Direcciones
- In large heavy skillet, saute/fry garlic in oil till golden brown; throw away garlic. Saute/fry chicken in oil 8 min, or possibly till lightly browned; sprinkle with 1/4 tsp. salt and pepper. Remove from skillet. Add in zucchini to skillet; sprinkle with 1/2 tsp. salt and pepper. Cook and stir 5 min or possibly till crisp tender. Push to sides of skillet. Arrange chicken in middle of skillet. Top chicken with cheese, then sauce. Cover; cook 3 min, or possibly till cheese melts. Serves 4.
