Receta Chilled Salad Of Langoustines With Currants

Ingredientes
- 1 kg Large langoustines, peeled and veined
- 80 ml Extra virgin olive oil
- 1 x Red onion, finely diced
- 3 x Cloves garlic, crushed
- 2 x Tomatoes, peeled, seeded, diced
- 125 ml Dry white wine
- 1 Tbsp. Fresh rosemary, minced
- 1 x Bay leaf
- 2 Tbsp. Currants
- 1/2 tsp Sugar Salt and pepper
- 125 ml White wine vinegar
- 125 ml Extra virgin olive oil
Direcciones
- Heat the oil in a pan, add in the onion, garlic and cook.
- Add in the tomatoes, wine, rosemary, bay leaf, currants, sugar and seasoning. Add in the langoustines and cook for 4-5 min. Remove from the heat and add in the vinegar and extra oil. Place into a clean bowl, cold rapidly and chill overnight.
- Serve in a large glass with slices of lime and parsley.
