- 1 1/2 cups warm water, divided (or, if not using espresso powder, 1/2 cup warm water and 1 cup warm coffee)
- 2/3 cup plus 1 teaspoon granulated sugar, divided
- 2 teaspoons dry yeast
- 4 1/2 cups bread flour
- 2/3 cup firmly packed light brown sugar
- 2/3 cup cocoa powder, sifted
- 1 teaspoon instant espresso powder, optional (see above)
- 2 teaspoons salt
- 1 large egg, at room temperature
- 12 tablespoons unsalted butter, softened
- 8 ounces good-quality dark chocolate, chopped into 1/2-inch chunks
- 1 (6 oz.) package Mariani Cherries
- Egg Glaze
- 1 large egg
- 1 teaspoon water
