  • 1 lb chorizo removed from casings and crumbled
  • 1/2 c. minced yellow onions
  • 1 tsp chopped garlic
  • 2 Tbsp. minced fresh cilantro
  • 8 x corn tortillas Pico de Gallo Guacamole Roasted corn kernels Grated peppered Monterey Jack or possibly Mexican queso blanco

Direcciones

  1. Heat a large skillet over medium-high heat. Add in the sausage and cook till brown and the fat is rendered, about 5 min. Add in the onions and cook till soft, about 3 min. Add in the garlic and cook 30 seconds. Remove from the heat and stir in the cilantro.
  2. Over a warm grill or possibly in a clean skillet over high heat, heat the tortillas till warmed through and pliable. Divide the sausage filling among the hot tortillas and serve with desired accompaniments.
  3. This recipe yields 4 servings.
