  • (makes about 1/2 cup dressing, but can easily be doubled)
  • 1/2 cup (packed) fresh cilantro (feel free to use the stems, just cut off the very bottoms)
  • 2 garlic cloves, roughly chopped
  • 2 tablespoons fresh squeezed lime juice (about 1 medium lime)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon ground cumin
  • 1/4 cup canola or olive oil
