%3C/p%3E%3Cp%3EInstead%20of%20hand%20kneading%20the%20dough%20I%20pulled%20out%20my%20BHG%20Stand%20mixer%20and%20worked%20the%20dough%20in%20there...%20and%20I%20learned%202%20very%20important%20things%20about%20the%20mixer:%3C/p%3E%3Cp%3E1.%20The%20spatter%20shield%20does%20not%20fit%20on%20the%20bowl%20well%20and%20is%20very%20frustrating..%20I%20tried%20it%20once%20and%20that%20was%20it..%20It%20went%20to%20the%20bottom%20of%20the%20cabinet,%20I%20won%E2%80%99t%20be%20using%20it%20again.%3C/p%3E%3Cp%3E2.%20When%20using%20the%20dough%20hook%20to%20knead%20dough%20even%20on%20medium%20speed%20the%20machine%20(even%20being%20suction%20cupped%20down%20to%20the%20counter)%20Jumped%20around%20the%20counter..%20So%20I%20had%20to%20watch%20it%20carefully%20so%20it%20didn%E2%80%99t%20fall%20clear%20off%20the%20counter.%3C/p%3E%3Cp%3EThe%20mixer%20is%20great%20otherwise,%20it%20kneaded%20up%20the%20dough%20in%20just%20a%20few%20minutes.%3C/p%3E%3Cp%3ENow,%20Back%20to%20the%20cinnamon%20rolls:%3C/p%3E%3Cp%3EDough:%3C/p%3E%3Cp%3EStart%20your%20dough%20by%20first%20adding%20the%20yeast%20to%20the%20lukewarm%20milk%20and%20adding%201%20Tablespoon%20of%20the%20sugar%20from%20the%20%C2%BD%20cup%20needed%20for%20the%20dough%20(you%20need%20to%20feed%20the%20yeast%20to%20make%20it%20happy)%20Let%20it%20sit%20about%205%20minutes%20until%20it%20gets%20foamy..%3C/p%3E%3Cp%3ECombine%20all%20the%20ingredients%20for%20the%20dough%20in%20a%20large%20mixing%20bowl%20(or%20the%20bowl%20of%20a%20stand%20mixer).%20Stir%20until%20the%20mixture%20begins%20to%20come%20together,%20it%E2%80%99s%20gonna%20look%20a%20little%20rough,%20but%20don%E2%80%99t%20worry,%20it%20will%20smooth%20out%20in%20the%20next%20step.%3C/p%3E%3Cp%3ETo%20knead%20by%20hand,%20transfer%20the%20dough%20to%20a%20lightly%20floured%20work%20surface%20and%20knead%20for%205-8%20minutes%20or%20until%20smooth.%3C/p%3E%3Cp%3ETo%20knead%20in%20a%20stand%20mixer,%20attach%20the%20dough%20hook%20and%20knead%20for%204-7%20minutes%20at%20medium%20speed.%3C/p%3E%3Cp%3EPlace%20the%20dough%20in%20a%20lightly%20oiled%20bowl,%20turning%20it%20to%20grease%20all%20sides.%20Cover%20the%20dough%20with%20plastic%20wrap%20and%20let%20it%20rise%20in%20a%20warm%20place%20for%2060%20minutes%20or%20until%20doubled%20in%20size.%3C/p%3E%3Cp%3EPunch%20down%20the%20dough.%20Transfer%20to%20a%20lightly%20floured%20surface%20and%20roll%20into%20a%2016%C3%9721%20inch%20rectangle.%20Leaving%20a%201-inch%20border%20at%20one%20of%20the%20short%20ends,%20spread%20the%20dough%20evenly%20with%20the%201/3%20cup%20softened%20butter.%20Sprinkle%20the%20brown%20sugar%20and%20cinnamon%20evenly%20over%20the%20buttered%20area%20of%20the%20dough.%20Be%20sure%20to%20spread%20the%20filling%20all%20the%20way%20out%20to%20the%20edges%20except%20on%20the%20one-inch%20border.%3C/p%3E%3Cp%3EStarting%20at%20the%20opposite%20end%20from%20the%20clean%20one-inch%20border,%20roll%20the%20dough%20into%20a%20log.%20Pinch%20the%20end%20all%20the%20way%20across%20the%20log%20to%20seal%20the%20dough.%3C/p%3E%3Cp%3EUsing%20a%20very%20sharp%20serrated%20knife%20or%20dental%20floss%20Cut%20the%20dough%20into%2012%20equal%20slices%20and%20place%20the%20buns%20in%20a%20lightly%20greased%209%C3%9713%20pan%20(I%20used%20my%20BHG%20nonstick%20pan)%20Cover%20the%20pan%20with%20plastic%20wrap%20and%20let%20the%20buns%20rise%20for%20about%2030%20minutes%20or%20until%20nearly%20doubled.%3C/p%3E%3Cp%3EWhile%20the%20buns%20are%20rising,%20preheat%20the%20oven%20to%20400%20degrees.%20Bake%20until%20golden%20brown,%2012-14%20minutes.%3C/p%3E%3Cp%3EWhile%20the%20buns%20are%20baking,%20make%20the%20icing:%20In%20a%20small%20bowl,%20beat%20together%20the%20cream%20cheese,%20butter,%20sugar,%20and%20vanilla.%3C/p%3E%3Cp%3EWhen%20the%20buns%20are%20golden%20brown,%20remove%20from%20the%20oven%20and%20allow%20to%20cool%20for%205-10%20minutes.%3C/p%3E%3Cp%3ESpread%20with%20the%20icing.%3C/p%3E%3Cp%3EThe%20Kid%20couldn%E2%80%99t%20wait%20to%20get%20his%20hands%20on%20one%20of%20these%20rolls%20(no%20matter%20that%20it%20was%20past%2010pm%20when%20I%20was%20finished%20baking%20them)%20They%20are%20absolutely%20delicious!%20Next%20time%20I%20think%20I%20might%20add%20some%20golden%20raisins%20to%20the%20filling%20for%20a%20little%20extra%20oomph.%3C/p%3E){kind=link}
