?%20It%20is%20really%20hard!%20I%20finally%20settled%20on%20blueberry%20crumbles,%20using%20some%20orange%20and%20lemon%20zest%20to%20boost%20the%20missing%20vanilla%20flavor.%20My%20first%20crumble%20was%20a%20complete%20failure.%20It%20had%20absurd%20quantities%20of%20butter%20(really%20a%20veteren%20baker%20such%20as%20myself%20should%20have%20noticed%20the%20ratio%20was%20off)%20and%20led%20to%20a%20big%20oven%20mess%20and%20a%20rather%20greasy%20cake.%3C/p%3E%3Cp%3EBut%20I%20hit%20pay%20dirt%20with%20my%20next%20try.%3C/p%3E%3Cp%3EThe%20recipe%20was%20actually%20for%20a%20blueberry%20breakfast%20cake,%20that%20I%20then%20choose%20to%20put%20a%20crumble%20(crisp)%20topping%20on.%20I%20found%20the%20recipe%20I%20adapted%20from%20in%20Lisa%20Yockelson%E2%80%99s%20Baking%20Style:%20Art,%20Craft,%20Recipes.%20I%20pretty%20much%20think%20anything%20Yockelson%20does%20is%20genius,%20so%20I%20was%20pretty%20sure%20that%20my%20plan%20of%20turning%20it%20into%20a%20crumble%20would%20work.%20It%20is%20buttery,%20tangy%20with%20juicy%20blueberries%20(please%20use%20seasonally%20frozen%20if%20it%20is%20not%20blueberry%20season%20where%20you%20are!),%20and%20rich%20with%20the%20crispy%20topping.%20I%20used%20an%20oat%20crisp%20topping,%20but%20nuts%20would%20work%20as%20well.%20Just%20use%20whatever%20your%20favorite%20recipe%20is%E2%80%93I%20did%20not%20include%20a%20recipe%20because%20I%20was%20not%20diligent%20about%20measuring%20when%20I%20made%20it!%20A%20quick%20note%20about%20the%20blueberries:%20if%20you%20are%20using%20fresh%20(I%20did%20not),%20Yockelson%20recommends%20freezing%20them%20for%20an%20hour%20first%20so%20that%20when%20you%20fold%20them%20into%20the%20batter%20they%20are%20less%20likely%20to%20burst.%3C/p%3E%3Cp%3ESammy%20and%20Alex%20made%20(under%20my%20supervision)%20the%20first%20buckle%20failure.%20As%20mentioned,%20it%20was%20the%20recipe%E2%80%99s%20fault,%20not%20user%20error.%20I%20made%20this%20buckle%20while%20they%20were%20out%20with%20their%20dad%20on%20a%20day%20when%20I%20was%20finally%20feeling%20a%20lot%20better.%20Amusingly,%20when%20they%20got%20home,%20they%20were%20both%20outraged%20that%20I%20had%20had%20the%20nerve%20to%20bake%20any%20kind%20of%20blueberry%20cake%20without%20them!%20Apparently%20blueberry%20cakes,%20much%20like%20muffins%20and%20brownies,%20have%20now%20been%20categorized%20as%20something%20that%20they%20believe%20they%20should%20be%20in%20charge%20of!%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20F.%3C/p%3E%3Cp%3EButter%20a%209%20inch%20springform%20pan%20thoroughly.%20Set%20aside.%3C/p%3E%3Cp%3EWhisk%20together%20the%20flour,%20baking%20powder,%20baking%20soda,%20cream%20of%20tartar,%20salt%20and%20nutmeg.%20Set%20aside.%3C/p%3E%3Cp%3EBeat%20the%20butter%20on%20moderate%20speed%20until%20creamy.%20Add%20the%20orange%20and%20lemon%20zest%20and%20beat%20an%20additional%2030%20seconds.%20Scrape%20the%20sides%20and%20bottom%20of%20the%20bowl.%3C/p%3E%3Cp%3EAdd%20the%20sugar,%20gradually,%20while%20beating%20the%20butter%20on%20moderate%20speed.%20When%20all%20of%20the%20sugar%20is%20added,%20beat%20an%20additional%20minute,%20until%20light%20and%20fluffy.%3C/p%3E%3Cp%3EScrape%20the%20sides%20and%20bottom%20of%20the%20bowl%20again.%3C/p%3E%3Cp%3EAdd%20the%20eggs,%20one%20at%20a%20time,%20scraping%20the%20bowl%20as%20needed.%20Beat%20for%2030%20seconds%20after%20adding%20each%20egg,%20incorporating%20the%20eggs%20into%20the%20batter.%20Beat%20in%20the%20vanilla%20if%20using.%3C/p%3E%3Cp%3ERemove%201%20tablespoon%20of%20the%20flour%20mixture%20to%20a%20medium%20sized%20bowl.%20Set%20aside.%3C/p%3E%3Cp%3EOn%20the%20lowest%20speed,%20add%20the%20flour%20mixture%20and%20sour%20cream,%20alternating,%20in%204%20and%203%20additions,%20respectively.%20Begin%20and%20end%20with%20the%20flour%20mixture.%3C/p%3E%3Cp%3EToss%20the%20frozen%20blueberries%20with%20the%20tablespoon%20of%20flour.%20Then%20gently%20fold%20the%20blueberries%20into%20the%20cake%20batter%20by%20hand.%3C/p%3E%3Cp%3EScrape%20the%20batter%20into%20the%20prepared%20springform%20pan.%20Sprinkle%20the%20unbaked%20crisp%20topping%20over%20the%20cake%20evenly.%3C/p%3E%3Cp%3EBake%20for%2050-60%20minutes,%20until%20the%20topping%20is%20brown%20and%20crisped,%20and%20a%20cake%20tester%20inserted%20into%20the%20center%20of%20the%20cake%20comes%20out%20with%20only%20a%20few%20crumbs%20or%20blueberry%20juice%20on%20it.%3C/p%3E%3Cp%3ELet%20the%20cake%20cool%20in%20the%20pan%20for%2010%20minutes.%20Then%20remove%20the%20outer%20wall%20of%20the%20springform%20pan%20and%20let%20cool%20completely.%3C/p%3E%3Cp%3E3.2.1596%3C/p%3E%3Cp%3Eberries,%3C/p%3E%3Cp%3Eblueberries,%3C/p%3E%3Cp%3Ebreakfast,%3C/p%3E%3Cp%3Ebuckle,%3C/p%3E%3Cp%3Ecake,%3C/p%3E%3Cp%3Ecrisps,%3C/p%3E%3Cp%3Elemon,%3C/p%3E%3Cp%3Eoats,%3C/p%3E%3Cp%3Eorange,%3C/p%3E%3Cp%3Equick%20breads,%3C/p%3E%3Cp%3Evanilla%3C/p%3E){kind=link}
