%20attempt.%20The%20quality%20of%20the%20chestnuts%20were%20even%20sadder%20back%20then.%3C/p%3E%3Cp%3EI%20was%20thankful%20that%20I%20had%20a%20few%20plump%20ones%20to%20munch%20on.%20They%20were%20fragrant,%20nutty,%20and%20sweet.%20Peeling%20the%20inner%20skin%20with%20a%20paring%20knife%20did%20require%20some%20patience.%3C/p%3E%3Cp%3EAfter%20two%20attempts,%20I%20may%20just%20have%20to%20rely%20on%20roasted,%20peeled,%20and%20ready%20to%20eat%20chestnuts%20from%20the%20Asian%20market.%20These%20are%20moist%20but%20not%20fragrant.%20If%20only%20I%20can%20get%20some%20plump%20juicy%20chestnuts%E2%80%A6..%3C/p%3E%3Cp%3EYou%20may%20have%20heard%20stories%20of%20chestnuts%20exploding%20in%20the%20oven%20or%20on%20the%20stove.%20To%20prevent%20that%20from%20happening,%20most%20people%20would%20slit%20or%20pierce%20the%20shell%20with%20an%20X.%20I%20omitted%20this%20step%20because%20I%20did%20not%20want%20to%20lose%20any%20fingers%20slitting%20those%20hard%20shells.%20As%20far%20as%20I%20can%20remember,%20I%20had%20never%20seen%20them%20exploding%20when%20the%20street%20vendors%20were%20roasting%20them%20in%20their%20huge%20woks.%20I%20took%20a%20chance%20and%20I%20am%20happy%20to%20say%20that%20none%20exploded%20in%20both%20my%20attempts.%20Please%20slit%20or%20pierce%20with%20an%20X%20if%20you%20feel%20safer%20doing%20so.%20It%20probably%20helps%20in%20peeling%20the%20chestnuts%20when%20they%20are%20cooked%20and%20ready%20to%20be%20eaten.%3C/p%3E%3Cp%3ECoffee%20Roasted%20Chestnuts%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EWash%20and%20drain%20chestnuts.%20Wipe%20dry%20with%20paper%20towels.%3C/p%3E%3Cp%3EMelt%20butter%20in%20a%20large%20cast%20iron%20dutch%20oven.%20Add%20chestnuts%20and%20stir%20to%20coat%20with%20butter,%20about%203%20minutes.%3C/p%3E%3Cp%3EAdd%20coffee%20beans%20and%20stir%20for%202%20to%203%20minutes.%20Cover%20and%20allow%20it%20to%20roast%20on%20the%20stove%20over%20medium%20low%20heat.%20Give%20chestnuts%20a%20good%20stir%20after%20every%205%20to%2010%20minutes.%3C/p%3E%3Cp%3EChestnuts%20should%20be%20cooked%20after%2030%20minutes.%3C/p%3E%3Cp%3ETransfer%20to%20bowl%20and%20cover%20with%20a%20towel%20until%20cool%20enough%20to%20handle.%3C/p%3E%3Cp%3EPeel%20and%20enjoy%20while%20still%20warm.%3C/p%3E%3Cp%3E2.6%3C/p%3E%3Cp%3Ehttp://www.rotinrice.com/2014/11/coffee-roasted-chestnuts/%3C/p%3E%3Cp%3ECopyright%20%C2%A9%202010-2014%20Roti%20n%20Rice.%20All%20rights%20reserved.%3C/p%3E%3Cp%3EUpdate:%20November%2026th,%202014%3C/p%3E%3Cp%3ESince%20chestnuts%20are%20still%20in%20season%20and%20available%20at%20the%20grocery%20stores,%20I%20decided%20to%20give%20it%20another%20try.%20The%20previous%20bag%20(seen%20above)%20were%20Korean%20chestnuts%20purchased%20from%20the%20Asian%20market.%20They%20were%20huge%20and%20cost%20$3.49%20a%20pound.%20This%20one%20pound%20bag%20of%20smaller%20Italian%20chestnuts%20from%20my%20local%20grocer%20cost%20$7.99.%20That%E2%80%99s%20twice%20the%20price%20of%20the%20previous%20bag.%20However,%20my%20one%20pound%20bag%20did%20weigh%20about%201.25%20pounds.%20They%20looked%20promising.%3C/p%3E%3Cp%3EI%20roasted%20about%20two%20thirds%20of%20the%20chestnuts%20as%20soon%20as%20I%20got%20home%20to%20take%20advantage%20of%20their%20freshness.%20I%20washed,%20dried,%20and%20cooked%20them%20as%20before.%20No%20slitting.%20I%20used%20my%20remaining%20coffee%20beans%20which%20were%20not%20quite%20sufficient%20but%20it%20will%20have%20to%20do.%20There%20was%20a%20lot%20of%20smoke%20and%20sizzling,%20probably%20because%20there%20was%20much%20more%20moisture%20in%20the%20nuts.%20Their%20shells%20appeared%20to%20be%20thinner%20and%20burnt%20easily.%20One%20of%20the%20chestnuts%20exploded!%20Good%20thing%20I%20had%20the%20lid%20on%20the%20dutch%20oven%20at%20that%20time.%20I%20only%20roasted%20these%20chestnuts%20for%20about%2015%20to%2020%20minutes%20as%20they%20were%20smaller%20and%20I%20did%20not%20want%20to%20set%20off%20the%20smoke%20alarm.%20Thankfully,%20that%20did%20not%20happen.%3C/p%3E%3Cp%3EFinally,%20I%20found%20a%20batch%20of%20meaty%20chestnuts%20with%20no%20hollow%20centers!%20Some%20of%20them%20came%20out%20of%20their%20shells%20and%20inner%20skin%20easily%20while%20others%20had%20to%20be%20peeled%20with%20a%20paring%20knife.%20The%20texture%20was%20a%20little%20more%20crumbly%20as%20compared%20to%20the%20Korean%20chestnuts.%20The%20ones%20that%20I%20ate%20in%20Malaysia%20were%20smaller%20(like%20these%20Italian%20ones)%20but%20the%20texture%20was%20more%20like%20the%20Korean%20chestnuts.%3C/p%3E%3Cp%3EFor%20comparison%20purposes,%20I%20boiled%20the%20remaining%20third%20for%20about%2015%20minutes.%20These%20were%20moist%20and%20crumbly.%20I%20think%20Italian%20chestnuts%20are%20better%20roasted%20than%20boiled.%3C/p%3E%3Cp%3EEnjoy%E2%80%A6..and%20have%20a%20wonderful%20day!%3C/p%3E){kind=link}
