  1. I like to top my cool soba (Japanese green tea noodles) with sliced scallions and thin strips of nori (seaweed). They add in a little "crunch" to the dish.
  2. I usually serve Cool Soba by placing a sushi mat on top of a rectangular dish (to collect water from melting ice) and placing loads of ice cubes on top of the mat. Layer the noodles on top of the ice and place minced scallions and seaweed on top. Everyone gets a dish of the cool sauce with more minced scallions in it and some Japanese pepper flakes for those who like it spicy. Sometimes I have raw quail's Large eggs and slices of ham to put in the sauce for some guests.
