Ingredientes
- All purpose Flour - 1cup
- Cool Water - ½cup
- Instant Yeast - ⅛tsp
- Dough:
- All purpose Flour - 2¼cups
- Salt - 1¼tsp
- Instant Yeast - 1tbsp (SAF Gold Instant yeast preferred)
- Sugar - ⅓cup
- Butter - 4tbsp, at room temperature
- Fiori di Sicilia - ⅛tsp or 2tsp vanilla extract + ⅛tsp orange oil
- Grated peel of 1 Orange
- Dried fruit - 1cup, chopped if large (I used dried apricots, cranberries and raisins)
- For the Topping:
- Egg white - 1 large, reserved from the dough
- Almond Flour - 3tbsp or 3tbsp blanched almonds, finely ground
- Sugar - 2tbsp
- Sliced Almonds - 2tbsp
- Coarse White Sugar or Pearl Sugar or Demerera sugar- 5~6tsp

%3C/p%3E%3Cp%3EI'm%20taking%20a%20short%20break%20from%20breakfast%20bakes%20today%20and%20instead%20have%20a%20delicious%20Easter%20bread.%20I%20recently%20joined%20the%20Bread%20Bakers%20group.%20%23BreadBakers%20is%20a%20group%20of%20bread%20loving%20bakers%20who%20get%20together%20once%20a%20month%20to%20bake%20bread%20with%20a%20common%20ingredient%20or%20theme.%20More%20information%20about%20the%20group%20and%20how%20to%20join%20in%20the%20baking%20fun%20is%20at%20the%20end%20of%20the%20post.%3C/p%3E%3Cp%3EThis%20month's%20theme%20is%20Easter,%20Passover%20and%20Springtime%20breads%20from%20around%20the%20world.%20I%20made%20these%20cute%20little%20spring%20breads%20last%20week%20and%20wanted%20to%20try%20a%20more%20traditional%20Easter%20bread%20for%20the%20Bread%20Bakers%20group.%20Found%20this%20Colomba%20Pasquale%20or%20Easter%20Dove%20bread%20recipe%20on%20King%20Arthur%20website.%20The%20dove%20shaped%20bread%20looked%20lovely,%20so%20I%20decided%20to%20give%20it%20a%20try.%3C/p%3E%3Cp%3EColomba%20Pasquale%20is%20a%20traditional%20Easter%20bread%20made%20with%20flour,%20eggs,%20sugar,%20yeast%20and%20butter.%20It%20is%20fashioned%20into%20a%20dove%20shape%20(colomba%20in%20Italian)%20and%20then%20topped%20with%20pearl%20sugar%20and%20slivered%20almonds%20before%20baking.%20It%20is%20very%20similar%20to%20it's%20Christmas%20counterpart,%20the%20Panettone.%20It%20is%20flavored%20with%20candied%20peel.%3C/p%3E%3Cp%3EThis%20KAF%20version%20of%20dove%20bread%20has%20dry%20fruit%20and%20orange%20rind/%20zest%20in%20it.%20I%20think%20I%20followed%20the%20instructions%20to%20the%20T,%20but%20the%20shape%20of%20my%20dove%20is%20up%20for%20discussion.%20My%20husband%20thinks%20it%20looks%20like%20an%20octopus,%20whereas%20I%20can%20clearly%20see%20a%20very%20very%20chubby%20bird.%20I've%20seen%20dove%20shaped%20baking%20pans%20online%20that%20one%20can%20use,%20but%20I%20guess%20it's%20the%20thought%20that%20counts%20and%20also%20once%20the%20bread%20is%20sliced,%20who%20cares%20if%20it%20looked%20like%20a%20skinny%20or%20chubby%20dove%20:-)%3C/p%3E%3Cp%3EThe%20dough%20is%20fairly%20high%20in%20fat%20and%20sugar,%20so%20it%20takes%20a%20little%20bit%20of%20time%20to%20come%20together%20and%20is%20equally%20slow%20during%20the%20rise.%20So%20be%20patient%20and%20give%20yourself%20extra%20time%20for%20rising%20if%20your%20house%20is%20cool.%3C/p%3E%3Cp%3EI%20did%20not%20add%20eggs%20to%20the%20bread,%20instead%20used%20some%20egg%20replacer%20(flax%20seed%20goop%20can%20also%20be%20used).%20For%20the%20egg%20white%20wash,%20I%20used%20some%20soy%20milk%20and%20it%20worked%20just%20fine.%20I%20would%20have%20added%20at%20least%20%C2%BDcup%20of%20whole%20wheat%20flour%20to%20the%20dough,%20but%20with%20all%20the%20baking%20I%20have%20been%20doing,%20I%20ran%20out%20of%20whole%20wheat%20flour.%20All%20in%20all,%20the%20bread%20turned%20out%20soft,%20flaky%20and%20oh%20so%20flavorful%20with%20the%20addition%20of%20fiori%20di%20Sicilia%20extract%20(flowers%20of%20Sicily%20extract).%3C/p%3E%3Cp%3ERecipe%20adapted%20from%20here:%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EBiga%20(Overnight%20Starter):%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EMake%20the%20Biga:%20The%20night%20before%20making%20the%20bread,%20mix%20together%20the%20biga%20ingredients,%20cover%20the%20bowl%20and%20set%20aside%20for%20up%20to%2015%20hours%20at%20room%20temperature.%3C/p%3E%3Cp%3ETo%20make%20the%20Dough:%20Biga%20will%20be%20quite%20bubbly%20in%20the%20morning.%20Combine%20the%20biga,%20flour,%20yeast,%20sugar,%20salt,%20butter,%20eggs%20(egg%20replacer%20mixture),%20fiori%20di%20sicilia%20and%20mix%20to%20combine.%20I%20had%20to%20add%202~3tbsp%20water%20to%20get%20the%20dough%20to%20come%20together.%20Knead%20the%20dough%20with%20the%20dough%20hook%20for%2012%20minutes,%20by%20this%20time%20dough%20will%20be%20soft%20and%20satiny.%3C/p%3E%3Cp%3EKnead%20in%20the%20orange%20zest%20and%20dry%20fruit.%3C/p%3E%3Cp%3ECover%20and%20set%20the%20dough%20aside%20for%203%20hours.%20By%20this%20time,%20dough%20will%20be%20very%20puffy.%3C/p%3E%3Cp%3EGently%20deflate%20the%20dough%20and%20divide%20into%202%20pieces%20--%20one%20slightly%20bigger%20than%20the%20other.%3C/p%3E%3Cp%3EShape%20the%20pieces%20into%2010%22%20and%207%22%20long%20logs.%20Taper%20the%2010%22%20log%20on%20one%20side.%3C/p%3E%3Cp%3EPlace%20the%20longest%20log%20lengthwise%20on%20a%20parchment%20lined%20baking%20sheet;%20use%20the%20edge%20of%20the%20hand%20to%20form%20a%20crease%20in%20the%20center.%3C/p%3E%3Cp%3ELay%20the%20shorter%20log%20crosswise%20across%20it,%20right%20at%20the%20crease.%20Shape%20the%20shorter%20log%20into%20'wings'%20by%20pulling%20it%20into%20a%20crescent%20shape.%20Flatten%20the%20tail%20and%20the%20wings,%20then%20using%20a%20sharp%20knife%20or%20scissors%20to%20snip%20'feathers'.%20Place%20a%20whole%20almond%20for%20an%20eye.%3C/p%3E%3Cp%3ECover%20with%20a%20lightly%20greased%20plastic%20wrap%20and%20let%20rise%20for%20about%202%20hours.%20Don't%20let%20it%20rise%20too%20much%20as%20the%20shape%20of%20the%20dove%20might%20get%20too%20distorted.%3C/p%3E%3Cp%3ETowards%20the%20end%20of%20the%20rising%20time,%20preheat%20the%20oven%20to%20375%C2%B0F.%3C/p%3E%3Cp%3EPrepare%20the%20Topping:%20Combine%20soymilk%20(or%20the%20reserved%20egg%20white),%20almond%20meal%20and%20sugar%20in%20a%20small%20bowl.%20This%20will%20be%20a%20thick%20glaze.%20Brush%20it%20on%20the%20dove%20liberally.%20Sprinkle%20the%20almonds%20and%20pearl/%20coarse%20or%20demerera%20sugar%20on%20top.%3C/p%3E%3Cp%3EBake%20for%2015%20minutes.%20Then%20lower%20the%20oven%20temperature%20to%20350%C2%B0F%20and%20bake%20for%2020%20additional%20minutes.%20For%20the%20last%2010%20minutes,%20loosely%20tent%20the%20bread%20with%20an%20aluminum%20foil%20to%20prevent%20over-browning.%3C/p%3E%3Cp%3EBy%20the%20end%20of%20baking%20time,%20bread%20should%20be%20golden%20brown%20and%20the%20internal%20temperature%20should%20be%20190%C2%B0F%20on%20an%20instant%20read%20thermometer%20inserted%20into%20the%20center.%3C/p%3E%3Cp%3EGently%20move%20the%20bread%20onto%20a%20wire%20rack%20and%20cool%20completely%20before%20slicing.%3C/p%3E){kind=link}
