  • 1 c. fresh corn, kernels
  • 1 Tbsp. fresh chives
  • 1/2 c. baby shrimp
  • 1 x egg, separated
  • 2 Tbsp. all purpose flour
  • 1/4 tsp salt
  • 1/4 tsp pepper canola oil, for deep-frying

Direcciones

  1. Preheat the oil to 365 degrees Fahrenheit.
  2. Stir together the corn, shrimp, chives and egg yolk. In another bowl whisk the egg white till frothy. Fold it into the corn mix and add in the flour.
  3. Heat the oil to 365 degrees Fahrenheit (185 centigrade) and drop the batter in by the spoonful. Allow to cook for 2 to 3 min, till puffy and golden brown. Drain on paper towels.
