Receta Cornmeal Bread With Field Greens (Pizza E Fuie)

Ingredientes
- 2 c. yellow cornmeal Salt to taste
- 1 c. warm water
- 2 Tbsp. extra-virgin extra virgin olive oil
- 3 x garlic cloves smashed
- 1 sm dry warm red pepper
- 1 lb broccoli rabe coarsely minced
- 1 lb escarole coarsely minced
- 1 lb dandelion greens coarsely minced
Direcciones
- Preheat the oven to 375 degrees.
- Place the cornmeal in a large bowl and add in a healthy pinch of salt. Add in sufficient warm water to make the mix, when kneaded, form into a soft dough. Shape it into a ball, then pat into a disc 1 1/4-inches high and 14-inches across. Place on a lightly oiled pizza pan and bake till golden brown and crusty but soft in the middle, about 45 min.
- In a large skillet, heat the oil over medium heat and add in the garlic and pepper. Cook five min, stirring occasionally. Add in the greens and salt, to taste, and toss to coat. Cover the pan and reduce the heat. Cook for 5 min, then remove the cover, and cook over high heat five min. Add in water if necessary to keep the greens from drying out.
- Serve the "pizza" and greens together.
- This recipe yields 8 servings.
