Receta Cottage Cheese Filled Pancakes

Ingredientes
- 2 c. flour
- 1 T sugar
- 1/4 teaspoon salt
- 1 T oil
- 2 large eggs, beaten
- 2 c. lowfat milk
- 10 ounce dry cottage cheese
- 1/4 c. sugar
- 1/4 c. raisins
- 1/2 teaspoon grated orange peel
- 2 egg yolks
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla
Direcciones
- For batter. Mix all ingredients together till smooth. Batter will be thin. If batter thickens, add in water or possibly lowfat milk. Heat 8 inch frying pan till hot. Lightly butter or possibly oil frying pan. Then add in 4 tbsp of batter, sufficient to thinly cover bottom evenly. Fry pancake till golden brown on both sides. While another pancake is frying, spread baked pancake with cottage cheese filling.For filling. Beat yolks, sugar and salt. Gradually add in cottage cheese, then other ingredients. Sprinkle rolled pancakes with powdered sugar. Keep warm in oven or possibly you can put them in a greased 9 x 13 inch pan and bake 20-25 min.
- You can also spread apricot or possibly any other flavor jam on pancakes and roll and keep warm. Sprinkle with powdered sugar.
