  1. Drain beets reserve 1/4 c. of juice set aside. In a sauce pan combine sugar, corn starch, vinegar and salt. Mix until smooth. Stir in beet juice and bring to a boil. Cook and stir 2 min. Remove from heat. Stir in raisins and let stand 5 min. Add in beets and cook over heat for 2 min.
