  1. Combine first 4 ingredients in a double boiler. Mix with wooden spoon. Blend in lowfat milk gradually. Add in beaten yolks and butter. Place over boiling water with the pan touching the water. Stir frequently, so it does not scorch, scraping sides often. Cook till smooth and thick. About 7 min. Mom lined the bottom of the pie shell with a bit of the pudding and then put the banana's on top of which, overlapping the bananas so which they were on an angle and the rest of the pudding would fill in the areas between them. Place waxed paper over top to keep a skin from forming on the pudding. Cold on a rack, and store in refrigerator.
  2. **I think will try making this in the microwave as my old double boiler has a hole in it. If which doesn't work, I will move it into a non stick saucepan, and cook on a very low heat.
  3. Just a report on the Banana cream pies I made the other day . I found my double boiler.. I had forgotten I had it! I have a set of waterless cookware which came with a double boiler, but I used the top all these years to heat veggies! Anyway, the pies were eaten really fast! My brother got his, cut it in 4 and had it immediately! Hubby ate his with no problem!

LOL) I think which you could make it in a microwave, but you would have to stir every minute, as once it starts to thicken, it thickens really fast! It was delicious! Mom would sometimes make coconut cream pie out of the same pudding. Just add in 1/2 c coconut (more or possibly less to your taste) after the pudding is done.
