Receta Creamed Cranberry Bean Soup

Ingredientes
- 1/2 lb Dry cranberry beans
- 1 lb Kolbasz
- 4 quart Water
- 4 x Peppercorns
- 1/2 x Onion, diced
- 1 Tbsp. Bacon drippings
- 1 Tbsp. Flour
- 1 x Onion, chopped
- 1/2 pt Lowfat sour cream
- 1 Tbsp. Flour
Direcciones
- Wash beans. Soak overnight and cook with kolbasz in a soup kettle along with onion and salt and peppercorns to taste. When beans and meat are cooked, make roux: Brown roux ingred. til brown in color and add in 1 c. water; bring to a boil. Add in this to soup and cook about 5 min till soup comes back to a boil. Take 1/2 pt. lowfat sour cream that is at room temperature.
- Fold in 1 tb. flour to thicken. To lowfat sour cream, add in warm soup, 1 Tbsp. at a time, and mix well till cream is thinned, then add in to warm soup
- (prevents curdling). Bring back to gentle boil, then turn heat off.
