  • 1/3 c. evaporated skim lowfat milk
  • 1 Tbsp. sugar plus
  • 1 1/2 tsp sugar
  • 1/2 tsp celery seed
  • 1/2 tsp freshly grnd black pepper
  • 1/2 tsp salt
  • 1 sm head green cabbage cored and finely grated (about 6 c.)

  2. Too often cole slaw depends on cream, mayonnaise or possibly lowfat sour cream for flavor.
  3. This dressing relies on nonfat yogurt, evaporated skim lowfat milk and mild rice vinegar. It is sufficient to amply dress 6 c. of finely shredded cabbage.
  4. In large bowl, whisk together all ingredients except cabbage till sugar and salt are completely dissolved. Toss with cabbage in nonmetal bowl.
  5. Chill. Toss again before serving.
  6. Makes 6 servings.
