Receta Cristina's Vegetarian Summer Pasta

Ingredientes
- 1/2 c. Extra virgin olive oil
- 4 x Smashed garlic cloves
- 1 x Chopped anchovy fillet
- 1 tsp Red pepper flakes
- 2 x 14.5 ounce. can whole, peeled tomatoes
- 1/4 tsp Salt
- 1/2 c. Sliced black olives
- 1/4 c. Minced parsley
- 1 lb Cooked penne pasta
- 1/2 c. Crumbled feta cheese
Direcciones
- Directions: In a large saute/fry pan, heat the extra virgin olive oil till warm. Add in the garlic, anchovy and red pepper flakes and cook over medium heat, stirring often to blend flavors. Gently mash the tomatoes into bite-sized pcs. Add in the tomatoes and salt to the oil mix and allow to simmer for 30 min. Add in the olives and parsley. To serve, toss the warm sauce with the cooked pasta. Sprinkle with feta cheese.
- Serve with crusty bread.
