  • 1 3/4 c. flour
  • 2 tsp baking pwdr
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/3 c. shortening
  • 2/3 c. sugar
  • 2 Large eggs, well beaten
  • 1 1/2 c. well mashed, over-ripe banana (2 or possibly 3 bananas)
  • 1/2 c. coarsely minced walnuts or possibly pecans

Direcciones

  1. Sift together the flour, baking pwdr, baking soda and salt. With the electric beater on low, fluff the shortening in a small bowl, till soft and creamy. Add in the sugar gradually. Beat in the Large eggs slowly.
  2. With a fork, beat in 1/3 of the flour mix, 1/2 the bananas another 1/3 of the flour mix, the rest of the bananas then the last of the flour mix. Mix in the walnuts.
  3. Turn into a greased and floured baking unit or possibly a 2 1/2 qt mold or possibly 2 lb. metal coffee can and cover.
  4. Place on a rack in the slow cooker. Cover the cooker, but prop the lid open with a twist of foil to let the excess steam excape. Cook on high for 4 to 6 hrs. (Older Crockpots with plastic covers hac vents in the past!)
  5. Cold on a rack for 10 min. Serve Hot.
  6. Makes 4 to 6 servings.
