Ingredientes
- 2 lb Medium-size potatoes peeled, halved, and very thinly sliced
- 3 lrg Onions halved vertically and thinly sliced
- 4 x Garlic cloves chopped
- 28 ounce Plum tomatoes - (1 can) minced and liquid removed
- 1/4 c. Tomato paste
- 1/2 c. Fruity extra virgin olive oil
- 3 Tbsp. Water
- 2 tsp Dry oregano Salt to taste Black pepper, freshly grnd to taste
Direcciones
- Preheat the oven to 400 degrees. In a large bowl, combine the potatoes, onions, garlic, and tomatoes.
- In a small bowl, beat together the tomato paste, extra virgin olive oil, water, oregano, salt, and pepper. Pour over the vegetable mix and toss to coat well. Spread this mix in a 12- by 7- by 2-inch baking dish or possibly other 2 1/2-qt ovenproof shallow dish. Cover tightly with aluminum foil and bake 30 min. Remove the foil and bake 45 min longer, or possibly till the potatoes are tender.
- This recipe serves 4.
- Comments: The onions and tomatoes caramelize and create an irresistible crust in this peasant-style casserole. All you need is a salad to round off the meal.
