Receta Cucumber Salsa
I learned this from an online posting at blogspot. It's good with fried meat or fish.

Ingredientes
- 1 large cucumber or 2 small cucumbers seeded and finely diced
- 1/4 cup finely diced red onion
- 1/4 cup finely diced red, orange, or yellow bell pepper
- 2 Tbsp chopped fresh mint
- 1 Tbsp rice wine vinegar
- 1 Tbsp olive oil
- 1/4 teaspoon salt
- 1 teaspoon minced jalapeño (more to taste)
Direcciones
- Put all of the salsa ingredients into a medium bowl
- Toss to combine.
- Taste and add more jalapeño if you desire more heat.
