Receta Cucumber Soup
For several years, we attended tea parties at a local science fiction/fantasy convention where they served a cold cucumber soup. It was a light, lovely addition to the tea table. After searching around for a recipe for it to add to my collection, I found this on in my mom’s recipe box. Apparently, it had been there all along.
I didn’t bother with the circle of waxed paper, just covered my saucepan and let it cook. It seemed to work just fine.

Ingredientes
- 3 cups cucumber, peeled and diced
- 3/4 cup chopped scallions, (greens as well as whites)
- 2 tablespoons butter
- 2 tablespoons flour
- 4 cups chicken broth
- 1 tablespoon lemon juice
- 1/2 cup sour cream
- 1-2 tablespoons chopped fresh dill weed
Direcciones
- Place the cucumber, scallions, and butter in a saucepan. Cover with a circle of wax paper cut to fit the inside of the pan exactly. Simmer over low heat for 10 minutes.
- Discard the paper and add the flour. Stir in the chicken broth and lemon juice. Simmer for 10 minutes. Add salt if necessary.
- Puree the soup in a blender (or use a stick blender) and chill in the refrigerator for four hours.
- Garnish each bowl with sour cream and dill weed.
