For several years, we attended tea parties at a local science fiction/fantasy convention where they served a cold cucumber soup. It was a light, lovely addition to the tea table. After searching around for a recipe for it to add to my collection, I found this on in my mom’s recipe box. Apparently, it had been there all along.
I didn’t bother with the circle of waxed paper, just covered my saucepan and let it cook. It seemed to work just fine.

  1. Place the cucumber, scallions, and butter in a saucepan. Cover with a circle of wax paper cut to fit the inside of the pan exactly. Simmer over low heat for 10 minutes.
  2. Discard the paper and add the flour. Stir in the chicken broth and lemon juice. Simmer for 10 minutes. Add salt if necessary.
  3. Puree the soup in a blender (or use a stick blender) and chill in the refrigerator for four hours.
  4. Garnish each bowl with sour cream and dill weed.
