- 1/2 c. softened butter
- 1/2 c. shortening
- 3/4 c. sugar
- 3/4 c. dark brown sugar

- 2 large farm fresh eggs
- 2 c. mixed baking chips (milk chocolate, dark chocolate, white chocolate)
- 1 c. roasted, unsalted sunflower seeds

%3C/p%3E%3Cp%3EI%20decided%20to%20give%20him%20benefit%20of%20the%20doubt%20and%20since%20I%20had%20Crisco%20in%20the%20cupboard%20from%20mom%E2%80%99s%20pie%20making%20during%20Thanksgiving,%20I%20thought%20I%20would%20bake%20him%20a%20treat,%20but%20only%20giving%20in%20half-way.%3C/p%3E%3Cp%3EHere%20is%20my%20rendition%20of%20a%20clean-out-the-pantry-day%20cookie%20(based%20heavily%20on%20the%20old-standby%20recipe%20on%20the%20side%20of%20a%20chocolate%20chip%20bag!).%20%20%20(I%20also%20found%20some%20sunflower%20seeds%20that%20I%20was%20afraid%20would%20go%20rancid%20if%20left%20for%20even%20one%20more%20day.)%3C/p%3E%3Cp%3ECupboard%20Cookies%3C/p%3E%3Cp%3EPreheat%20oven%20to%20375%20degrees.%3C/p%3E%3Cp%3EWhisk%20together%20flour,%20baking%20soda%20and%20salt.%20%20%20Set%20aside.%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20a%20stand%20mixer,%20cream%20together%20butter%20and%20shortening.%20%20%20Add%20sugars%20and%20vanilla%20and%20continue%20to%20beat.%20%20%20Beat%20in%20eggs%20one%20at%20a%20time.%20%20%20%20Add%20chips%20and%20sunflower%20seeds%20and%20mix%20until%20just%20incorporated.%3C/p%3E%3Cp%3EYou%20can%20add%20whatever%20you%20want%20at%20this%20point---granola,%20dried%20fruit,%20pepitas---whatever%20you%20have%20in%20the%20pantry.%3C/p%3E%3Cp%3EUsing%20a%20cookie%20scoop,%20drop%20cookie%20dough%20onto%20prepared%20baking%20sheets.%20%20%20Place%20in%20oven%20and%20bake%20for%20around%2010%20minutes%20(give%20or%20take%20a%20few).%20%20%20Remove%20from%20oven%20and%20cool%20on%20cookie%20sheets%20for%20a%20few%20minutes%20then%20remove%20to%20wire%20racks.%3C/p%3E%3Cp%3EI%20have%20to%20agree,%20these%20cookies%20turned%20out%20nice%20and%20fluffy%20with%20the%20substitution%20of%20half%20shortening,%20half%20butter.%20%20%20%20I%20really%20liked%20the%20sunflower%20seeds,%20too.%3C/p%3E%3Cp%3EThis%20recipe%20made%20about%20three%20dozen%20cookies.%3C/p%3E%3Cp%3EThese%20cookies%20are%20also%20finding%20their%20way%20to%20the%20hospitality%20room!%3C/p%3E%3Cp%3ENote:%20%20%20Scarletta%20at%20Scarletta%20Bakes%20did%20another%20interesting%20%E2%80%9CClean%20Pantry%20Cookie%E2%80%9D%20last%20week.%20%20%20%20Please%20check%20it%20out.%20%20Her%20cookies%20are%20lot%20more%20creative%20than%20mine!%3C/p%3E){kind=link}
