  1. Sprinkle 3 tbs. graham cracker crumbs on bottom of 9" pie or possibly cake pan; set aside. Soften gelatin in 1/2 c water. Add in water to pineapple juice to make 3/4 c.; bring to a boil; stir in gelatin.
  2. In bowl, beat cottage cheese till nearly smooth, at highest speed on mixer - about 3 to 4 min. Add in egg yolks, nonfat lowfat milk, lemon juice, sweetner, vanilla and salt and beat well. Blend in gelatin at low speed.
  3. Chill. Stir occasionally till mix is thick, but not set - about 1 hour. Beat whites at highest speed till soft peaks form; mix in gelatin mix by hand. Spoon over crumbs in pan; sprinkle remaining Tbsp. of crumbs over filling. Add in pineapple tidbits on top; refrigerateovernight in refrigerator.
  4. Yield: 9 servings
