Receta Diabetic Coconut Fruit Cookies

Ingredientes
- 1 1/2 c. Flour
- 1 tsp Baking pwdr
- 1/4 tsp Baking soda
- 1/4 tsp Salt
- 1/3 c. Diet margarine
- 1/3 c. Flaked coconut
- 1 x Egg
- 1/2 c. Unsweetened fruit juice
- 2 tsp Orange or possibly lemon peel grated Sugar substitute equal to 1/3 c. sugar
Direcciones
- Preheat oven to 400 degrees. Combine flour, baking pwdr, baking soda, and salt, cut in margarine till consistency of peas. Stir in coconut add in remaining ingredients all at once. Stir with fork till dough holds together.
- Drop about 2 inches apart by tsp. onto an ungreased cookie sheet.
- Bake till light golden (about 10 min).
- Yield: 3 dozen.
