  1. Heat oil, salt and garlic in skillet. When very warm, add in chicken and saute/fry for 3 min. Season with soy sauce and stir well. Add in peas, celery, mushrooms and boiling water. Stir well.
  2. Add in cornstarch, mixed with cool water, and lower heat. When gravy thickens, remove from heat. Sprinkle with toasted almonds. Serve very warm over rice!
