- 1 cup uncooked white rice or 3 cups cooked white rice
- 2 chorizo on longaniza sausage links, chopped into 1/2 inch cubes
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 1/2 green bell pepper, diced or equivalent amount of ajicitos dulces
- 1 can pink beans (in juice)
- 1/2 cup alcaparrado (pickled olive and caper salad)
- 2 tablespoons olive oil
- 1/2 teaspoon achiote (annatto) seeds
