Receta Kitchen of Lard: Foie Gras with Bacon-Flavored Cabbage
Ingredientes
- 1 x 300 gram can duck (or goose) foie gras
- 1/2 large head green or white cabbage (Savoy cabbage would also work, just halve the cooking time!)
- 4-6 rashers smoked bacon, cut into 1 inch lardons
- 1 glass dry white wine
- 2 cloves garlic, finely chopped
- 4-8 juniper berries, partly crushed
- 4-6 oz fresh blackberries
- 3 tablespoons balsamic vinegar
- 1 tablespoon pomegranate molasses
- 1/2 teaspoon mustard seeds, lightly crushed
- salt and black pepper to taste
