%20the%20horses%20in%20question%20are%20likely%20to%20have%20been%20American%20horses,%20and%20b)%20because%20eating%20horses%20is%20disgusting%20and%20unfathomably%20cruel.%20Animal%20loving%20organizations,%20like%20the%20one%20I%20used%20to%20work%20for,%20were%20up%20in%20arms,%20seething%20at%20the%20abject%20slaughter%20of%20our%20mighty%20chargers%20by%20those%20filthy,%20snaggle-toothed%20Europeans.%20After%20all,%20what%20truly%20civilized%20country%20would%20consider%20carving%20up%20their%20noble%20steeds%20when%20there%20are%20so%20many%20dumber,%20slower%20and%20less%20attractive%20creatures%20on%20the%20farm%20who%20don%E2%80%99t%20let%20you%20ride%20on%20their%20backs%20to%20stick%20a%20knife%20into?%3C/p%3E%3Cp%3EOf%20course,%20that%20is%20only%20half%20the%20story.%20The%20other%20half%20being%20that%20most%20of%20the%20unfortunate%20equines%20who%20made%20it%20into%20Ikea%20Swedish%20meatballs%20weren%E2%80%99t%20farmed%20for%20food%20in%20the%20first%20place.%20No,%20they%20were%20of%20no%20less%20noble%20parentage%20than%20some%20of%20North%20America%E2%80%99s%20most%20esteemed%20racing%20blood-stock,%20who,%20during%20their%20short%20and%20tortured%20careers,%20were%20pumped%20full%20of%20the%20equine%20veterinarian%E2%80%99s%20favorite%20cocktail%20of%20steroids%20and%20antibiotics%20before%20being%20sold%20for%20slaughter%20to%20Mexican%20and%20Canadian%20abattoirs.%20So%20much%20so,%20in%20fact,%20that%20those%20with%20a%20rather%20more%20omnivorous%20approach%20to%20life,%20even%20unwittingly,%20were%20warned%20against%20eating%20them%20lest%20we%20suddenly%20sprout%20manes,%20start%20galloping%20spontaneously%20or%20develop%20a%20penchant%20for%20oats.%20Whether%20or%20not%20it%20is%20more%20humane%20to%20send%20raced-out%20or%20lame%20horses%20to%20the%20glue%20factory%20than%20the%20butchers,%20I%20leave%20to%20the%20ethicists%20among%20you,%20but%20suffice%20it%20to%20say%20that%20I%20believe%20that%20whatever%20ends%20up%20in%20the%20human%20food%20chain%20should%20be%20regulated%20on%20behalf%20of%20the%20consumer%E2%80%99s%20health.%20If%20that%20also%20coincides%20with%20the%20animal%E2%80%99s%20health%20and%20well-being,%20so%20much%20the%20better.%3C/p%3E%3Cp%3EIt%E2%80%99s%20widely%20acknowledged%20that%20the%20consumption%20of%20horses%20is%20one%20of%20the%20major%20divides%20between%20Anglophone%20and%20Francophone%20Canadians,%20the%20latter%20having%20no%20more%20compunction%20about%20putting%20Mister%20Ed%20to%20the%20sword%20than%20their%20co-linguists%20in%20France.%20So,%20last%20summer,%20flaunting%20the%20general%20ethical%20code%20of%20my%20then-employer%20and%20knowing%20the%20biological%20risks,%20we%20purchased%20a%20scant%20pound%20of%20horse%20meat%20during%20our%20stay%20in%20Montreal%20-that%20it%20was%2030%25%20off%20may%20have%20reflected%20the%20incipient%20consumer%20anxiety%20at%20its%20provenance.%20As%20regular%20readers%20may%20know,%20we%20ate%20with%20vigor%20and%20with%20almost%20unparalleled%20appetite%20on%20that%20trip,%20and%20so%20were%20unable%20to%20consume%20it%20north%20of%20the%20border.%20But,%20so%20determined%20were%20we%20to%20taste%20horse%20flesh,%20we%20decided%20to%20risk%20approbation%20from%20the%20Department%20of%20Homeland%20Security%20and%20smuggle%20it%20back%20in%20alongside%20a%20bevy%20of%20Middle%20Eastern%20condiments%20and%20spices%20taken%20from%20the%20shelves%20of%20the%20very%20wonderful%20March%C3%A9%20Adonis.%20After%20a%20few%20nervous%20moments%20at%20the%20Vermont%20border%20as%20our%20trunk%20was%20inspected%20by%20a%20suspicious%20customs%20official,%20we%20drove%20home%20and%20secreted%20said%20contraband%20in%20our%20freezer.%3C/p%3E%3Cp%3ESix%20months%20later,%20having%20almost%20forgotten%20about%20it,%20and%20during%20a%20late%20winter%20clear-out,%20we%20came%20across%20it%20and%20decided%20we%20should,%20ahem,%20get%20back%20on%20the%20horse.%20Armed%20with%20a%20jar%20of%20za%E2%80%99atar%20and%20a%20flat-top%20griddle,%20we%20seasoned%20said%20chunks%20of%20dark,%20purplish%20horse,%20skewered%20them,%20and%20seared%20them%20on%20high.%20Five%20or%20six%20minutes%20later,%20we%20were%20enjoying%20the%20minerally,%20iron-rich%20flavor%20of%20pink-centered%20horse%20kebabs%20stuffed%20inside%20warmed%20pita%20and%20slathered%20with%20tzatziki%20and%20grilled%20vegetables.%20For%20contrast,%20we%20also%20skewered%20some%20beef%20rib%20eye%20chunks.%20It%E2%80%99s%20remarkable%20how%20lean%20the%20horse%20was%20by%20comparison%20%E2%80%93%20thanks,%20perhaps,%20to%20its%20racing%20pedigree%20%E2%80%93%20and%20how%20clean%20and%20ungamey%20the%20flavor.%20If%20I%20had%20to%20place%20it,%20I%20would%20put%20it%20somewhere%20between%20beef%20and%20lamb%20in%20the%20strength%20of%20its%20taste,%20but%20very%20much%20further%20towards%20venison%20in%20texture%20and%20lack%20of%20richness.%20It%20was%20good,%20but%20not%20so%20good%20that%20I%20would%20rush%20out%20and%20get%20some%20more,%20were%20it%20available,%20but%20good%20enough%20that%20I%20would%20certainly%20try%20it%20again.%3C/p%3E%3Cp%3EThis%20was%20about%20a%20month%20ago,%20and%20during%20the%20interim%20we%20have%20neither%20found%20ourselves%20jumping%20fences%20nor%20neighing%20uncontrollably,%20so%20we%E2%80%99re%20fairly%20certain%20that%20the%20limited%20quantity%20we%20ingested%20had%20no%20immediate%20detrimental%20consequences.%20Of%20course,%20should%20you%20wish%20to%20chew%20on%20an%20old%20nag,%20unless%20you%E2%80%99re%20consuming%20contaminated%20meatballs%20or%20happen%20to%20know%20an%20unscrupulous%20vet,%20finding%20horse%20meat%20this%20side%20of%20the%2049th%20parallel%20is%20going%20to%20be%20tough.%20That%20said,%20our%20neighbors%20both%20North%20and%20South,%20are%20far%20more%20liberated%20in%20their%20choice%20of%20protein,%20and%20should%20you%20find%20yourself%20in%20Europe,%20Central%20Asia%20or%20parts%20of%20South%20America,%20horse%20is%20also%20comparatively%20easy%20to%20find.%3C/p%3E%3Cp%3EAs%20for%20us,%20like%20boy%20scouts%20in%20the%20quest%20for%20an%20arm%20full%20of%20patches,%20now%20that%20we%E2%80%99ve%20crossed%20this%20one%20off%20our%20list,%20we%E2%80%99re%20already%20mentally%20moving%20down%20the%20equidae%20family%20tree,%20having%20recently%20found%20a%20recipe%20for%20donkey%20stew%20in%20a%20Puglian%20cookbook%E2%80%A6%3C/p%3E%3Cp%3ELebanese-spiced%20Horse%20Meat%20Kebabs%20(serves%202)%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EThread%20meat%20tightly%20onto%20kebab%20sticks%20%E2%80%93%20pre-soak%20if%20using%20bamboo%20sticks%3C/p%3E%3Cp%3EGrill%20for%202-3%20minutes%20per%20side,%20until%20nicely%20browned%20and%20crisp.%3C/p%3E%3Cp%3EServe%20with%20warmed%20pitas,%20grilled%20vegetables,%20and%20tzatziki.%3C/p%3E){kind=link}
