Ingredientes
- 1 c. minced zucchini
- 1 c. minced tomato
- 1/2 c. minced onion
- 1/3 c. grated Parmesan cheese
- 1 c. lowfat milk
- 2 Large eggs
- 1/2 c. Bisquick baking mix
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Direcciones
- Grease pie plate, 9 x 1 1/4 inches. Sprinkle zucchini, tomato, onion and cheese in plate. Beat remaining ingredients till smooth, 15 seconds in blender on high, 1 minute by hand. Pour into plate. Bake till knife inserted in center comes out clean, about 35 min. Cold 5 min. Garnish with tomato, and zucchini slices. Option: Add in 2 cans (5 oz) chunk chicken (liquid removed) or possibly 1 c. cooked chicken.
