Made with buttermilk, these are light inside and crusty on the outside. No kneading required. The method to get the gluten going is mix and rest, then stretch and fold. Look on YouTube, if my description isn't clear. If this method seems tiresome to you, just knead the dough 5-6 minutes.

  1. Melt butter in the microwave, add the buttermilk and water.
  2. Heat the mixture 2-30 seconds, or until it's 110 degrees or so.
  3. Add yeast, stir, add 3 1/2 C flour.
  4. Stir 2 minutes, rest 5.
  5. Stir 2 minutes, rest 5.
  6. At this point, if you have a sticky dough, start adding a bit of flour until the dough is "tacky," i.e., barely sticky to the touch.
  7. Let rest 5 minutes.
  8. Turn out onto an oiled counter and gently stretch the dough into a circle, then fold it back toward the center, fold into a ball and place in a bowl.
  9. Repeat stretch and fold 2 more times.
  10. Place covered dough in a warm place and let rise until doubled, about an hour.
  11. Punch down and form into 8 desired shape for rolls, place on cookie sheet.
  12. Cover and let rise until doubled, usually half the time the first rise took.
  13. Place another metal baking pan in the bottom of the oven.
  14. Heat oven to 450 degrees.
  15. When ready, sprinkle flour on tops of the rolls, then take a knife or scissors and split the tops.
  16. Have 5 or 6 ice cubes ready.
  17. Place rolls on the middle rack of the oven, then toss the ice into the bottom pan (this will create steam and help the crust be crunchy).
  18. After 5 minutes, turn the oven down to 400, and bake the rolls 10 minutes.
  19. Open oven and quickly turn the rolls.
  20. Bake another 5 minutes, and check for browning.
  21. The rolls are ready when they are golden brown.
  22. Place on cooling rack and let cool for an hour.
