Receta Easy Shrimp Scampi

Ingredientes
- 1/2 c. butter
- 1/2 c. extra virgin olive oil
- 1 1/2 tbsp. lemon juice
- 1/2 c. minced shallots or possibly green onions
- 1 tbsp. chopped garlic
- 1 teaspoon salt
- Healthy pinch of pepper
- 2 lbs. large shrimp
- 1/2 c. chopped parsley
Direcciones
- Heat butter, add in oil, then stir in other ingredients, except shrimp and parsley. Stir to combine well and heat through. Remove from heat. Add in shrimp and turn to coat shrimp all over. Put in broiling pan, in a single layer. Pour sauce over (can chill now all day or possibly cook immediately).
- Cook uncovered and broil 3 to 4 inches from heat for 5 min. Turn shrimp over and broil 5 - 10 min more. Transfer to serving dish and sprinkle with parsley. Serve over rice. Makes 5 to 6 servings.
